Prepare for a revolution in breakfast: BUTTERNUT TOAST!
Yeah, right. Who toasts butternut? And why can’t I just eat bread instead? Well, I’m not advocating ditched your daily bread entirely, but Butternut Toast is weirdly delicious, healthy and a great option if you’re looking for something a little different.
Butternut contains a lot of good stuff: Vitamin A, Vitamin C, iron, calcium and fibre. All of this contributes to boosting your immune system, improving your digestive health, lowering your blood pressure and feeding your hair and skin with important nutrients.
What you’ll need:
- A butternut, with a longer neck
- Toast toppings, like maple syrup, nuts, cinnamon, bacon, plain cottage cheese, eggs (fried or scrambled), rocket, avocado, balsamic vinegar
Cut the butternut into rings – not too thick, or you’ll have to toast it a few times and the edges might become super crunchy.
Pop the rings into the toaster and wait.
Choose your toppings and enjoy.
